Green Onions piano tab by Booker T and the MG's

Booker T & The MG’s were the house band at Stax Records. They wrote the song while they were waiting for a client to arrive for a recording session. After they were done playing the song the recording engineer asked Booker T, “If we release this song on an album what would you call it?” To which Booker replied, “Green Onions.” When asked why Booker replied, “Because that’s the nastiest thing I can think of and it’s something you throw away.” Steve Cropper, who was the band’s guitarist brought the song to a DJ in Memphis and after it was played on the radio the phone lines all lit up.
